How can I tell if seafood is fresh?
When purchasing seafood look for a clear, bright, translucent glow and a luminous, shimmering color in the flesh. The flesh should be moist, firm, and elastic to the touch. The flesh should not be milky, and no darkening on the edges of the fish.
You should also smell the fish. It should have no fishy ammonia or chemical order.
If the fish has been prepackaged (placed in a styrofoam tray and overwrapped in plastic) it should be tightly wrapped with little or no air and no liquid in the packaging.
What is the difference between farmed and wild fish? Is one better than the other?
Farmed fish is hatched and raised within a fish farm; a penned area where feed is provided. Wild fish is caught from natural stocks in the ocean, rivers or lakes.
As for which is better is totally up to the individual's taste buds.
Nutritionally, both farmed and wild fish are above-average sources of protein, low in saturated fats, and rich in unsaturated fats. Farm-raised fish are generally fattier and therefore contain more calories than the seafood caught wild.
What is the difference between fresh frozen versus frozen?
Fresh frozen or FAS frozen at sea (FAS) means the fish has been frozen within two hours after being caught. Because the freshness has been locked in, it's hard to tell this fish has been frozen.
